Iberico ham comes from iberico pigs. Each one of them can be individually traced. This pig is 100% iberian, a breed that has grown in free range in Spain for centuries.
The pigs are left in montanera during the autumn. This is in fields with oaks so the diet is strictly acorn and they are continously moving. This is what makes this meat so tasty, complex, intense and unique.
It takes more than 30 months to cure this ham and just when it reaches his optimum maturity it is released for sale after the master ham appraiser makes the decision.
This ham comes from Pedro Nieto in Guijuelo, town famous for the quality of the iberico pigs so they have become an officialy reconised Denominacion de Origen. Guijuelo is beside the beautiful and historical city of Salamanca.
Price per kg 40 euros. We provide the holder and the knife to cut the ham for an extra 15 euros. Weight of each piece 8kg to 9kg.
This Pedro Nieto Jamon comes from the same free range pig but the animal is helped in his diet with some fodder.
Price per kg 27 euros. We provide the holder and the knife to cut the ham for an extra 15 euros. Weight of each piece 7kg to 8.5kg.
